Check out the blog when you have a chance! In the last few days she posted about a wonderfully simple but really delicious Mediterranean salad, and so yesterday I decided to try it out.<\/p>\n<p>You can read the blog about her making this salad <a href=\"http:\/\/theactorsdiet.wordpress.com\/2010\/08\/30\/its-monday\/\"><strong>here<\/strong><\/a>, but I wanted to show you my version of the recipe that she posted.<\/p>\n<p>According to Lynn, her recipe includes the following:<\/p>\n<p><strong><em>Lynn&#8217;s Mediterranean Salad<\/em><\/strong><br \/>\nHeirloom cherry tomatoes<br \/>\nPersian cucumbers<br \/>\nZest\/juice of another big lemon<br \/>\n2 tablespoons Extra Virgin Olive Oil (EVOO)<br \/>\nA handful of chopped fresh Italian parsley<br \/>\n1\/4 tsp. salt and pepper<br \/>\nCut up a bag of <em>Misto alla Griglia<\/em> and added (with all their oils) to the mix<br \/>\n<div style=\"width: 490px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/theactorsdiet.files.wordpress.com\/2010\/08\/p1230531.jpg?w=480&#038;h=320\"><img loading=\"lazy\" decoding=\"async\" alt=\"Basically grilled eggplant and zucchini in a special marinade, only available in the US.\" src=\"http:\/\/theactorsdiet.files.wordpress.com\/2010\/08\/p1230531.jpg?w=480&#038;h=320\" title=\"Misto alla Griglia\" width=\"480\" height=\"320\" \/><\/a><p class=\"wp-caption-text\">Basically grilled eggplant and zucchini in a special marinade, only available in the US.<\/p><\/div>\n<p>I went to the local supermarket here in Los Banos (Robinson&#8217;s) to try and see if they had any of the ingredients. They had most of what I was looking for except for the specific Heirloom tomatoes or Persian cucumbers. However, I found out that just the regular small native tomatoes and cucumbers sufficed.  I of course couldn&#8217;t find the <em>Misto alla Griglia<\/em> that Lynn used in her recipe since that&#8217;s only sold in the US, so of course I decided to see what I could do with 2 extra large eggplant. (Surprisingly, there was no zucchini to be found in the store which was sorely disappointing).<\/p>\n<p>Since I didn&#8217;t have any of the already prepared eggplant and zucchini I decided to grill and marinade the veggies myself. Since I only had eggplant that&#8217;s all I used. Best part was, that it was all totally healthy and it tasted great!
